Real Texas Chili
      serves 4
      
        Ingredients
        
            - 2 lbs chuck roast, bite-sized pieces
- 3 cl garlic, minced
- 3 T	ancho or chipotle chili powder
- 1 ea onion, 1/4-inch dice
- 5 T	flour
- 2 T	dried oregano
- 2 t	ground cumin
- 3 C	beef broth
- sour cream
- grated cheese
 
      
        Instructions
        
            - Brown the meat, then add the garlic and onion and cook 2 minutes. Add the chili powder, flour, oregano, and cumin, and cook until the meat is well coated, then add the 1 1/2 qt broth and stir well.
- Cover and simmer for 45 minutes, stirring occasionally. Add as much additional broth as necessary to achieve desired consistency.
- Partially cover and simmer another 45 minutes, then season to taste.
- Plate, garnish with sour cream and cheese, and serve.
